Pumpkin is one of my favourite 'alternative' ingredients when baking. Considered a Vegetable, Pumpkin is packed with vitamins such as Vitamin A and Vitamin C which is amazing for skin and eye health. Its also very low in calories and has no saturated fats or cholesterol. Hence why its a great alternative when baking.
One of my favourite recipes being the Rustic Pumpkin Loaf. It's most likely the comforting spices that make me crave this in the colder months. I defiantly reach for homemade loaf's like this in the Winter as a snack more than fruit. So having a recipe you know is packed full of vitamins and is gluten free wont make you feel guilty for indulging.
No one should feel guilty for eating delicious homemade goodies.
By using Buckwheat Flour, not only does it make it Gluten Free but it gives it a rustic texture.
Using a good quality Buckwheat flour is defiantly key. It wont leave the bread with a gluggy texture.
This will sound like a strange combination but Warm this loaf up and serve with some vanilla bean coconut yoghurt and some frozen blueberries. It will leave your heart singing for more. Guaranteed
Rustic Pumpkin Loaf
2 cups Buckwheat Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Nutmeg
1/2 tsp Ground Cloves
1 tsp Ground Cinnamon
2 tsp Ground Turmeric
5 Tbsp Date Paste
2 Flaxseed Egg
1/2 Cup Oil
1/2 Cup Water
1 cup Pumpkin
1/2 Cup Walnuts
Pumpkin Seeds (for garnish)
Prepare flaxseed eggs by mixing 2 Tbsp ground flaxseed with 4 Tbsp of water then place into the fridge while you prep ingredients.
Cut up pumpkin, place on a baking tray with baking paper and roast until soft and golden.
Once cooked, let cool then mash with a fork until smooth.
In a large bowl mix together all ingredients except Walnuts and Pumpkin seeds.
Once mixture is combined fold in Walnuts.
Transfer mixture into a greased Loaf tin. Then garnish with Pumpkin Seeds.
Bake at 170 degrees for about 50minutes.
