Almighty Banana Bread


I mean it when I say this is the Almightiest (if that can even be considered a word) of all Banana Breads.  I have spent a lot of time perfecting it so that if and when I consume the entire loaf in a day, I don’t have to kick myself for giving into the temptation of fresh baking.

 

I’m proud to say that this Almighty Loaf doesn’t include refined sugars, bleached flour, oil or any butter as a matter of fact!  Date Paste is a natural replacement for all of these ingredients and it doesn’t make the Bread taste like dates. Which makes it perfect for people who aren’t a fan of dates.

A L M I G H T Y   B A N A N A   B R E A D


3 very ripe Bananas
1½ cups Buckwheat Four
½ tsp Baking Powder
1 tsp Baking Soda
4 heaped tbsp Date Paste (see notes below)
2 tsp Vanilla Essence
1 Flax Seed ‘Egg’

OPTIONAL

¼ cup Pumpkin Seeds
¼ ciup Sunflower Seeds
1 tsp Chia Seeds
¼ cup Sliced Almonds
 

Turn oven to 180 degrees.

Prep Flax Seeds first by mixing 1 heaped tbsp of Ground Flax Seeds with 3 tbsp of water. Pop in the fridge and let sit while you get the rest of the recipe together.
Mash the Bananas with a fork (Do Not mix together in blender)

I throw everything in a bowl and mix it all together. Seeds and all.
If you wanted extra sweetness throw in some choc chips.
Bake for about 35 – 40 minutes.
(be sure to check if its ready before pulling out of oven, no one likes gluggy banana loaf)

I Love popping it in the toaster then smearing peanut butter all over it, topping it with some sliced almonds and cacao nibs. Delish!
 

N O T E S

DATE PASTE –     I make a big batch of this at the start of the week for my baking.
I use dried Dates but feel free to use fresh ones (you won’t need to soak them)
Soak 2 cups of Dried Dates for a few hours.
Drain the water (squeeze out as much as you can)
Blend together, using a tamper tool until it forms a paste with no lumps.
I use date paste to replace sugar and Butter.

If you don’t have a Tamper Tool with your blender or no blender at all, you can prep them on the stove with a little bit of heat.

Soak and drain the dates, then put them in a pot on the stove on low heat.  Using a fork mash the dates and they heat. After a few minutes it will turn into a paste.
